Ticking boxes. Hotel Endemico, Groupo Habita’s new hotel near Mexico’s Gaudalupe Valley, is definitely on the travel list for 2012. Each ‘room’ was designed to be as eco-minded as possible, delicately perched on stilts with views of the picturesque valley.
